Technical:
Soil is light schist with some small stones.
Average age of vines is 30 years
Grape variety: Melon de Bourgogne
Assemblage of different plots of vines : la Savinière, les Pièces, le grand clos de la Bréhardière, derrière les murs de la Bretèche, in the commune of la Chapelle Basse Mer.
Vinification with strict temperature regulation and fermentation around 16 °C in order to develop the elegant fruit aromas.
Bottled in April after ageing approx. 6 months ‘sur lie’ throughout the winter.
Tasting Note:
Very aromatic with fruit aromas, hints of orange zest and white blossom.
Crisp green apple acidity on the palate, with fresh, citrus flavours and good depth of flavour from long ageing on the lees. Fresh, aromatic and elegant.
First class accompaniment to all seafood and fish dishes. Also good with light chicken dishes and seafood pasta.
